Kurt Regensburger - a culinary philosopher
'Enjoyment and health through a wholesome and balanced diet', this is the philosophy of our Head chef Kurt Regensburger.


Here is how we achieve our aims:
- With natural, whole food products from organic farming where ever possible
- With organically grown grains, such as wheat, rye, etc., freshly milled on the premises
- We use honey, cane sugar or maple syrup instead of crystallised white sugar
- We use fresh herbs to season our dishes
- We steam and blanch our vegetables gently to retain their valuable nutrients
- We only use sea salt or herbal salt
