Kurt Regensburger - a culinary philosopher

'Enjoyment and health through a wholesome and balanced diet', this is the philosophy of our Head chef Kurt Regensburger.

Here is how we achieve our aims:

  • With natural, whole food products from organic farming where ever possible
  • With organically grown grains, such as wheat, rye, etc., freshly milled on the premises
  • We use honey, cane sugar or maple syrup instead of crystallised white sugar
  • We use fresh herbs to season our dishes
  • We steam and blanch our vegetables gently to retain their valuable nutrients
  • We only use sea salt or herbal salt
