Healthy cuisine

`Enjoyment and health through a wholesome and balanced diet´, this is the philosophy of our Head chef Kurt Regensburger.

The Holzleiten cuisine has been granted the AMA quality seal (a guarantee for top quality local produce)

Here is how we achieve our aims:

  • With natural, whole food products from organic farming where ever possible
  • With organically grown grains, such as wheat, rye, etc., freshly milled on the premises
  • We use honey, cane sugar or maple syrup instead of crystallised white sugar
  • We use fresh herbs to season our dishes
  • We steam and blanch our vegetables gently to retain their valuable nutrients
  • We only use sea salt or herbal salt

We offer you a healthy, well-balanced diet throughout the day: a tasty bite in-between at our lunchtime snack buffet, with soups, salads, homemade strudels and cakes, as well as a selection of juices, coffee and tea. In our winter garden you can drink 'Grander' water direct from the spring, a selection of juices is available all day long, as well as dried fruit, nibbles and a range of teas. In the evening we propose a five course dinner - with a choice from three different set menus offering meat, fish and vegetarian dishes. We are particularly proud of our extensive buffet of chopped raw vegetables as well as our wonderful selection of local cheeses from the Ötztal dairy.
